Tasting note by Panos Tzimas MSc DipWSET, July of 2025
Deep lemon in appearance, Debina 2025 conveys the elevated vineyards of Zitsa (450–700 m) with notable purity and restraint. The nose is finely etched and mineral, revealing lemon zest and green apple intertwined with chamomile, subtle vanilla, light smoke, and delicate earthy clay nuances. A pronounced saline character, reminiscent of wet stone, reflects the metamorphic and limestone soils. On the palate, the wine is poised and finely structured, driven by vibrant, linear acidity and a gentle phenolic frame shaped by maturation in amphora and barrique. Flavours of citrus, crushed rock, and discreet toasted wood unfold with quiet precision. The finish is long, mineral, and persistent, carrying delicate herbal notes and hints of fresh and dried almond.
