Dimitris lives in Metsovo, a picturesque high-altitude village in Epirus near Ioannina city. He studied cask production in Bordeaux and he is a WSETlevel3 holder. He works in his family’s cooperage business.
The vineyard is small a plot of 0,25ha. It lays at 700m altitude on the lower slopes of Chrysovitsa. Chrisovitsa is a hamlet, 12 miles away from Metsovo. There, the soil is clay and the pH is neutral. The vines are farmed sustainable and trained in the double Royat system.
The grape variety is Vlachiko. This is a Greek indigenous variety that loves continentality and high altitudes. It gives wines with low colour intensity, low alcohol and high acidity. The typical flavours and aromas are red cherries, cranberries, violets and herbs.
Jima Winery had the pleasure to vinify its 2019 and 2020 fruit.
